Last night I made baked vanilla donuts! Yummy!! A little salty, I didn't realize that I only had course sea salt, hubby still liked it as did the boys!! I used the same recipe as I did the baked chocolate, just didn't add the cocoa!!
We had left overs for dinner, I had an Upper endoscopy today, and didn't feel much like cooking!! It really wasn't soon bad, and I know that ulcers are causing the pain in my belly!! Good news they don't recommend diet changes...because I do love me some caffeine and spicy foods!
Went grocery shopping at Target and was sadly disappointed that they did not have 4th of July sprinkles!! I usually love Target...cant win em all Target! Will try some other grocery stores tomorrow wish me luck...

Nom Nom Nom...
Dinner tonight... Homemade empanadas and red pepper mango slaw!! Info to follow
Great sight huh..So I made the empandas off of that site KINDA.
Dough
Recipe.
3 cups flour
1 teaspoon salt
1 egg yolk (save the white)
3/4 cup warm milk
Mix flour and salt in food processor,
Add yolk and milk and pulse.
Once a ball forms, roll out on a lightly floured surface.
Make disks with a bowl.
Fill with meat mixture
Fold edges over and brush with egg white
Cook for 10-15 mins at 400 degrees
Meat Mixture
1 pound beef
3/4 can tomato sauce
salt and pepper to taste
Tastefully Simple Garlic Garlic and Onion Onion to taste
Paprika to taste
Salt and pepper raw meat
brown meat
drain meat
add onion onion, garlic garlic and paprika and tomato sauce
cook for 10 mins on low.
Red Pepper, Mango Slaw
Half a bag of cole slaw
Quarter of bag match sticks carrots
1 mango chopped
1 red pepper in cut into match sticks.
1/4 cup rice wine vinegar
2 tablespoons honey
splash oil
1/2 lime juice
Mix all together Enjoy
VERDICT: Hubby and kids loved the empanadas!! I have made them before and it was a fav then as well. The slaw...didn't go over so well. I was the only one who like it.

Busy Busy
It has been a few days since I have posted...but don't worry, I still have been busy cooking!
Friday-
Pasta and Veggies
1 16oz box of small shell pasta, cooked and rinsed with cool water
3 tablespoons of mayo (light)
1 teaspoon dill
1 teaspoon vinegar
1 squash roughly chopped
2 vine ripe tomatoes roughly chopped
1 green pepper roughly chopped
Mix all items together, top with cheese, or nuts if you like, and ENJOY!
VERDICT: Not bad, but I will not make it exactly the same again.
I am the only one who ate this dish.
Saturday:
Pecan Crusted Chicken with Fresh peaches, mayo on a pretzel roll!
This recipe was a verison of Rachel Ray's dish.
1 can of green chilies
Pecans (candied) crushed
Mayo light
Pretzel Rolls
4 chicken breasts
2 pieces of white bread- crumbed
olive oil
peaches
Buttermilk
1. Pound chicken breasts to make thinner
2. Soak chicken in buttermilk overnight
3. Heat olive oil in skiller
4. combined crushed pecans and breadcrumbs (mix to taste)
5. coat chicken in pecan bread mixture
6. place in skillet and cook until no longer pink in middle
7. cut open pretzel roll
8. mix mayo and green chilies to make a chili mayo
9. mayo roll
10. cut peaches into slices
11. top roll with peach slices and chicken.
12. EAT
VERDICT: Hubs and kiddos like this dish. Once again the kids had a deconstructed verison without the mayo. Hubs had two sammies.
We will make this one again.
